Easy Air Fryer Stuffed Peppers Recipe {Make Ahead}

It takes only minutes to prep this simple air fried bell peppers recipe. It’s something the whole family can enjoy and you can easily make this ahead. Just prep the easy meat filling ahead of time and halve and remove all the seeds of the peppers. Stuff the peppers with the meat filing and store the peppers in the fridge for up to 3 days. When you’re ready to air fry, just lightly spray the bottom and top of the stuffed peppers and cook in the air fryer. You’ll have dinner ready in just a few minutes with easy clean-up.

Tips on How To Make Air Fried Bell Pepper Stuffed with Taco Meat

  • This recipe is for regular sized whole bell peppers but you can use smaller sweet peppers or different bell peppers. Cooking times will be about half the time. But with different air fryer models, the timing might differ. Just check after about 20 minutes and add additional minute or two of air frying to make sure the beef is cooked through.
  • Different Meats: You can use ground pork, chicken, turkey, crumbled tofu or even minced shrimp.
  • Sauces: this recipe uses regular tomato sauce for you can certainly mix it up with a white alfredo sauce or even a curry sauce for extra flavor.
  • Cheeses: try different types of melting cheeses like sharp cheddar, mozzarella, smoked gouda or even feta cheese.
  • Spices: Mix things up with different chopped fresh herbs, dried herbs, hot sauces or steak seasoning. We’ve tried them all and they’re all delicious and different.

All of our taste testers love these easy stuffed peppers! The air fryer cooks and crisps the meat and peppers wonderfully. It’s so easy to enjoy these for a quick dinner. We love it with different types of cheese like a mix of pepper jack and parmesan.

Ingredients

  • 2 bell peppers
  • 1/2 pound (227 g) ground beef, pork, chicken or turkey
  • 1/4 cup (60 g) tomato sauce
  • 1 cup (113 g) shredded cheddar cheese , divided
  • 1 teaspoon (5 ml) chili powder
  • 1/2 teaspoon (2.5 ml) garlic powder
  • 1/2 teaspoon (2.5 ml) ground cumin
  • 1/2 teaspoon (2.5 ml) dried oregano
  • 1/2 teaspoon (2.5 ml) salt , or to taste
  • 1/4 teaspoon (1.25 ml) black pepper , or to taste
  • olive oil or oil spray , for coating

OPTIONAL TOPPINGS:

  • green onions, salsa, guacamole, sour cream

Instructions

  • In bowl, combine meat, tomato sauce, 1/2 cup cheese, chili powder, garlic powder, ground cumin, dried oregano, salt and pepper.

  • Cut bell peppers lengthwise and remove seeds.

  • Flip the bell peppers over and spray/brush outside of bell peppers with oil.

  • Stuff the pepper halves with the meat mixture. Spray tops of meat and peppers. Lay stuffed peppers inside air fryer basket/tray. If you have a small basket, you may have to cook in 2 batches.

  • Air Fry at 360°F/182°C for 12-16 minutes or until meat is cooked completely. Top the meat with remainder of cheese and cook one more minute to melt cheese.

  • Serve with your favorite toppings.

Notes

COOKING TIPS:
If bell peppers tilt and fall over, place a small crumpled piece of foil under the pepper as a base.

Cutting the peppers lengthwise will help meat cook quicker and all the way through. If. you cut them crosswise, you might need a couple more minutes of cooking time.

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).

Yes, you can freeze these after they’re cooked. Once they’re all cooked through, allow them to cool completely. Store in air tight containers in the freezer for up to 2 months. Before re-heating, allow them to thaw in the fridge first. The you can re-heat them in the microwave, oven or air fryer again.
