This keto broccoli salad recipe is low in net carbs, has only 4 core ingredients and makes one of the best keto salads around to enjoy as a delicious side dish or whole meal.

We are a couple of weeks into Spring and all of a sudden it has starting snowing here again in Ireland.

So, I’ve been willing warmer weather and (eventually) summer by preparing this summery salad.

There are so many ways to adapt the salad by going beyond thesimple ingredients that appear in the recipe card down below, you can really adapt the perfect keto side dish to your tastes and what you have in your kitchen.

How To Make This Simple Broccoli Salad

To make the low carb recipe, start with a head of fresh broccoli. Give it a wash and chop the broccoli florets into little bite sized small pieces.

Don’t discard the woody broccoli stem, it’s wonderfully edible and you can finely chop or grate it into your easy keto diet broccoli salad.

In this instance, I chose to do both, chopping some and grating the rest into a large bowl. That way the salad had a variety of textures and flavors. You can also swap some of the broccoli for cauliflower to create a broccoli cauliflower salad.

Place all your broccoli into the large mixing bowl and mix through your speedy homemade creamy sour cream salad dressing.

Make thetangy dressingdressing by pouring sour cream,lemon juiceand salt over the salad, which I use as the dressing for my version of a creamy, traditional broccoli salad to keep it low in grams of carbs.

You could mix the dressing ingredients together separately and then pour it all over the keto salad. I prefer to save on washing up and doing it all together in the one bowl.

Also, instead of justsour creamyou could use mayo, plain Greek yogurt or a mixture of the three in a creamy mayonnaise dressing mixture.

I used lemon juice because I had a fresh lemon in the kitchen. You could use Apple Cider Vinegar or another vinegar instead.

Finish off the salad by adding on your toppings of choice, which I’ll cover in the next section, I simply went with a couple of hand fulls of grated cheese.

While this is a raw broccoli salad, you’ll find that by leaving for a little time the homemade dressing “cooks” the broccoli, making it tender and full of flavor.

Here are some ideas for toppings you can mix through your easy broccoli salad:

  • Grated Cheese such as mozzarella or a sharpcheddar cheese
  • Crunchy Sunflower Seeds, Pumpkin Seeds, Pine Nuts or any other nut or seed
  • Olive Oil, Red Wine Vinegar, Ranch Dressing or you dressing of choice instead of the homemade sour cream dressing in the recipe
  • Chopped Tomatoes
  • Chopped Peppers
  • Greens such as spinach or green onions
  • Chopped Onion or Garlic – raw or lightly cooked, regular or red onion
  • Feta Cheese – crumbled or chopped
  • Crumbled bacon such ascrispy bacon
  • A little bit ofStevia or Monk Fruit sweetener, to sweeten slightly

  • 1 Head of Broccoli
  • 1/2 to 1 Cup of Sour Cream
  • 1-2 Tablespoon Lemon Juice
  • Pinch of Salt
  • 1/2 Cup of Grated Cheese
  1. Chop the broccoli into florets and finely chop or grate the stalk/stem.
  2. Place the prepared broccoli into a salad bowl.
  3. Pour over the sour cream and lemon juice.
  4. Shake over the salt and add the grated cheese.
  5. Stir well to combine and place in the fridge for about an hour to allow the flavours to develop. Store any leftover classic broccolisalad in an airtight container and enjoy within a couple of days.
